chilled carob pudding
So I got a little hungry this afternoon around 3 pm and it's super hot right now in Houston. I didn't have any lemons to make icy lemonade or lemon pudding, but I remembered the fudgesicles my mom used to buy for us when we were kids. I knew I had ingredients to make something similar so I made myself a yummy, simple, cool snack. Enjoy!
1/2 cup carob powder
20 drops Alcohol free NuNaturals Stevia
splash of vanilla extract
water - 1/2-1 Cup
Scoop out the avocados and put them in the blender. Add the rest of the ingredients except for the ice. With the water, it depends on how smooth you want your pudding. I ended up using about 3/4 C water I think. I didn't measure it...sorry! Blend it all together until you get your desired creaminess and then add the ice. The ice thins out the flavor a bit so add a little more vanilla and stevia to get it to your sweet spot. Of course you can enjoy the pudding by itself as is, but I didn't want to wait for it to chill in the fridge or freezer so I added the ice. Super yummy!
