Migraine-free creamy chocolate chip chocolate fudge Cliff bars

Since cliff bars are full of ingredients that are migraine triggers and since my sweet husband is prone to migraines here is my humble take on one type of protein bar. More flavors to come!

Since cliff bars are full of ingredients that are migraine triggers and since my sweet husband is prone to migraines here is my humble take on one type of protein bar. More flavors to come!

In a small bowl combine 1/4 Cup ground flax meal with 1/4 Cup water and let sit until ooey gooey. 

In the meantime, combine the following in a large bowl:

1  - 9 oz bag 69/or 70% dark chocolate chips

1 tsp. pure Vanilla extract

1/2 tsp pure almond extract

1-1.5 C Steel cut Oats 

4 heaping scoops of Orgain brand Organic Protein plant based. For this recipe I used the creamy chocolate fudge flavor my husband had in the fridge. 

1/4 tsp. sea or Himalayan salt

1/4 Cup pure maple syrup

1/4 Cup Lakanto sweetener

1/4 Cup Almond milk -( I used the 365 unsweetened organic brand because it doesn't have guar gum or Carageenan in it. Those two things can cause a lot of inflammation in the gut. )

When the flax meal/water binder is gooey, add to the batter and mix everything together. 

grease a 6X9 inch pan with coconut oil, avocado oil or butter and pack down the batter into the pan so it is even. If you like these bars thicker, use a smaller pan. 

Bake at 350 degrees for 15-25 minutes or until it gets to the consistency and texture you like.
